Shrimp Stuffed Mushrooms

I was craving something unique and I'm a big mushroom lover, so my google search brought this recipe to my attention.  I have only made it once and it was delicious!

12 cleaned mushrooms (I used baby bellas)
1/2 cup chopped cooked shrimp
1/3 cup italian bread crumbs
1/3 cup chicken broth
1/4 tsp salt
2 cloves of minced garlic
1/8 tsp cayenne pepper
Parmesan cheese for tops

Remove the stems from the mushrooms, but keep them, you'll need them!

Grease a cookie sheet and put mushroom caps on it, then chop up the stems and put them in a medium sized mixing bowl.

Next add the rest of the ingredients to the bowl of stems and mix well.  If it seems too dry, add more broth.  If too wet, add more breadcrumbs.


Next spoon the stuffing into the caps of the mushrooms, be very generous!  Finish the prep off by sprinkling parmesan cheese to the tops of these bad boys.


Bake 'em at 375 degrees for about 20 minutes.  The cheese will melt and they will be a nice bubbly brown.  Enjoy!!!
